Truffles

Umbria boasts an exquisite culinary culture originating from Etruscan roots and is made up of beautiful rich, golden olive oil, full-bodied wines, an immense variety of cured meats, an abundance of meat dishes, beans and lentils, cheeses, mushrooms, wild asparagus and, of course, its highly prized truffles. Truffles are used in many different dishes and depending on the dish you would like to enrich with this delicacy, it can be freshly shaven over pasta, blended into a pâté or olive oil, used in soups, in omelette or whatever else you may like.

On the estate of Castello di Montegiove, two truffle varieties can be found: one is the “Scorzone” or black summer truffle and the other is the “Uncinato” or black autumn truffle. Truffle “hunting” is done with the help of specially trained dogs during specific periods throughout the year and only during the daytime. The “Scorzone” can be harvested from the last Sunday of May until the 31st of August and the “Uncinato” can be harvested from the 1st of October until the 31st of January.

The truffles found on the estate are sold locally to a number of excellent restaurants, but also exported abroad.
